Addictive doesn't begin to explain how amazing this dish is. It has become a new go to side dish for a lot of meals. Plus the left overs, if there are any, are just as delicious the next day.
Crack Potatoes
Ingredients:
5 Lbs of Potatoes, diced
16 Oz Onion and Chive Cream Cheese
3 Cups Finely Shredded Mild Cheddar Cheese
2 Bags Real bacon pieces or 1 Lb. of crumbled bacon pieces
6 Green Onions, chopped
Directions:
Boil diced potatoes until semi soft (like for potato salad).
Drain and put into oven safe pan.
Mix in cream cheese, bacon pieces and 1 cup of shredded cheese.
Cover with foil and bake @ 450° for 20 minutes.
Remove foil and then cover with remaining cheese and diced onions.
Bake until cheese is bubbly.
*For extra zing you could always toss the potatoes with ranch powder after before baking.
