Honey Spiced Roasted Chicken

Ingredients:
2 tablespoons honey
2 tablespoons olive oil
1/2 teaspoon ground cinnamon
1/2 teaspoon smoked paprika
Kosher salt and black pepper
One 4-pound roasting chicken, rinsed, dried and giblets removed
3 sprigs fresh rosemary
1 lemon, sliced

Directions:
Preheat the oven to 350 degrees F and adjust the racks to the center of the oven. Fit a roasting pan with a V-rack.

Mix together the honey, olive oil, cinnamon, smoked paprika and some salt and pepper in a small bowl.

Sprinkle the cavity of the chicken with salt and pepper. Stuff the cavity with the rosemary sprigs and lemon slices. Place the chicken in the V-rack-fitted roasting pan. Sprinkle the outside of the chicken with salt and pepper. Tie the drumsticks together using butcher's twine. Brush the outside of the chicken with about half of the honey glaze.

Transfer the chicken to the hot oven. Roast about 30 minutes, and then brush the glaze on the chicken once more. Continue to roast the chicken until the skin is golden brown , and an instant-read thermometer reaches 165 degrees when inserted in the thickest part of the thighs, about 45 minutes longer.

Crescent Pie Bites

Need an easy breakfast idea or to throw a quick desert together. This easy and delicious recipe is a definite hit.

Crescent Pie Bites

Ingredients:
1 Can Pie Filling (Any Flavor)
2 Tubes Crescent Rolls
1 cup Powdered Sugar

Preheat oven 375.
Spray two muffin tins with cooking spray (If you only have one tin, you will have to make two batches)
Open crescent roll cans and lay out the crescent roll dough flat.
Separate into individual sections and lay each piece in the muffin tins, widest section at the bottom.
Put pie filling into each crescent roll.
About 1-2 Tbsp. per crescent.
Gather the edges of the dough and fold up around the filling.
(It's ok if there are some gaps.)
Bake for 12 to 15 minutes.

Sprinkle with powdered sugar.

Crock Pot Chicken and Noodles

This is a delicious meal for a chilly night. Taste wonderful when served over mashed potatoes or hot biscuits.

Crock Pot Chicken and Noodles

Ingredients:
4 Boneless Chicken Breast 
2 Cans Cream of Chicken Soup
1 Stick of Butter
2 15 oz Cans of Chicken Broth
24 oz Egg Noodles

Directions: 
Cook chicken, soup, butter and broth in a crock pot on low for 6-7 hours.

Remove chicken and shred. Return to crock pot and add noodles. Cook on low for 2 hours. Stirring occasionally.

Herb Crusted Prime Rib

Prime Rib is everything you want in a cut of beef: It is impressively sized and naturally flavorful, and it pretty much takes care of itself (leaving plenty of time for side dishes).

Herb Crusted Prime Rib

Ingredients:
1 (10 pound) Prime rib roast
10 cloves garlic, minced
2 tablespoons olive oil
2 teaspoons salt
2 teaspoons ground black pepper
2 teaspoons rosemary, chopped

Directions:
Place the roast in a roasting pan with the fatty side up. In a small bowl, mix together the garlic, olive oil, salt, pepper and rosemary. Spread the mixture over the fatty layer of the roast, and let the roast sit out until it is at room temperature, no longer than 1 hour. Preheat the oven to 500 degrees F (260 degrees C).
Bake the roast for 20 minutes in the preheated oven, then reduce the temperature to 325 degrees F (165 degrees C), and continue roasting for an additional 60 to 75 minutes. The internal temperature of the roast should be at 135 degrees F (57 degrees C) for medium rare.
Allow the roast to rest for 10 or 15 minutes before carving so the meat can retain its juices.

Bacon and Cheddar Potatocakes

When I'm making a meal that includes mashed potatoes. I always make extras so I can make these the following day.

Bacon and Cheddar Potatocakes

Ingredients:
3 Slices of Bacon
4 Cups Cold Mashed Potatoes 
2 Eggs
1 Cup Shredded Cheddar Cheese
1 Tsp Onion Powder
1/2 Tsp each Salt and Pepper 

Directions:
Place bacon in a large, deep skillet, and cook over medium high heat, turning occasionally, until crisp, about 10 minutes.  Remove the bacon slices, crumble and set aside. Leave in bacon drippings in the skillet. Mix together the mashed potatoes, eggs, onion powder and salt and pepper. Stir in the bacon crumbles and shredded cheese. Form the mixture into 8 patties. Heat the bacon drippings over medium heat and fry the patties until golden brown about 4 minutes on each side.

Cowboy Chili Pie

Warm and filling meal for those wet Spring nights.

Cowboy Chili Pie

Ingredients:
1 Lb Ground Beef or Turkey 
1 Can Dark Red Kidney Beans
1 Pk Chili Seasoning 
1 Can Diced Tomatoes 
1 8 oz  Can of Tomato Sauce
1 Small bag of Frozen Corn
1 Medium Onion, chopped 
2 Boxes Jiffy Corn Bread Mix
1/4 Cup of Sugar

Directions:
Preheat oven to 350°
Cooked the meat until brown, drain if needed, set aside. In the same pan cook the onions until almost translucent. Add back in the meat and the beans, tomatoes, corn, sauce and chili seasoning. Cook to a boil and simmer until it thickens.
Make the corn bread according to the directions on the box while adding the sugar as well. Pour the chili into a casserole dish. Spread corn bread mixture over the top of the chili evenly. Bake in the oven for 30 minutes or until golden brown.

Peach Lemon Butter Cake

This cake is so good that people in Italy call it paradise cake. So basically, it’s pretty easy to make it and melts in your mouth — a combo that equates to paradise.

Peach Lemon Butter Cake

Ingredients:
2 eggs
1 egg yolk
2 cups peaches frozen
½ cup salted butter
1 cup sugar
½ teaspoon baking powder
2/3 cup flour
2 teaspoons vanilla extract
Zest of 1 lemon
Powdered sugar

Directions:
Preheat oven to 350°F.
Butter an 8.5- or 9-inch cake pan.
Over a medium heat, melt butter in a skillet.
Reduce heat to a simmer and add peaches. Cook for about 8-10 minutes.
Strain butter from the peaches, saving the butter on the side. In a bowl, mix baking powder and flour. In a separate bowl, mix eggs until they’re the consistency of scrambled. Add sugar, vanilla extract, lemon zest, and strained butter to the egg mixture. Mix until combined. Stir in flour mixture and cooked peaches until combined. Pour cake batter into cake pan and bake in the oven for 30-35 minutes, until the top of the cake is golden brown. Cool the cake for 30 minutes to an hour. Once cooled, flip cake out of the pan and dust with powdered sugar. Enjoy with a scoop of vanilla ice cream or on its own.

Creamy Garlic Mushrooms

I often make this recipe to serve with a nice piece of steak, chicken or pork, and use the sauce in the pan to pour over. It is also nice to serve alongside pasta.

Creamy Garlic Mushrooms

Ingredients:
8 oz Whole white mushrooms
2 cloves of garlic, minced
2 tbsp of Cream Cheese
1 tsp of Italian seasonings
Salt and Pepper
1 tsp of Olive Oil

Directions:
Heat a pan with a teaspoon of oil and add the mushrooms and garlic on medium heat. Stir and toss until soft and a little liquid is released from the mushrooms. Then add the cream cheese and combine. Add the seasoning and taste, season to your taste with salt and pepper. Serve straight from the pan, or you can transfer to an oven dish and place in the oven (covered) to keep warm until you are ready to serve.

Creamy Burrito Casserole

Ingredients:
1 Lb Ground Beef
1/2 Onion, chopped
1 Pkg Taco Seasoning
6 Lg Flour Tortillas
1 Can Refried Beans
3 Cups Shredded Taco Cheese
1 Can Cream of Mushroom Soup
4 oz Sour Cream

Directions:
Brown beef and onions, drain. Add taco seasoning and stir in refried beans. Mix soup and sour cream together in a separate bowl. Spread 1/2 of the sour cream mixture in the bottom of a casserole dish. Tear up 3 tortillas and spread them over the mixture. Spoon 1/2 the meat mixture over top of that. Add a layer of cheese. Repeat until all ingredients are used. Sprinkle cheese over top and bake, uncovered at 350° for 20 - 30 minutes.

Bacon Creamed Corn

Creamed corn is a favorite of mine but making it this way with the addition bacon takes it to a completely new level.

Bacon Creamed Corn

Ingredients:
1/4 Lb Bacon 
1 Onion, chopped 
2 Tbsp Flour 
20 oz of Frozen Corn 
2 Tsp Sugar 
2 Tsp Pepper 
1/2 Cup Milk

Directions:
In a large skillet cook bacon over medium heat until crispy. Remove from heat and set aside. Add onion to the grease and cook until softened. Stir in flour, continue cooking and stirring until it makes a paste. Stir in corn, sugar, pepper and milk until no lumps remain.
Cook over medium heat, stirring often, until mixture is thickened and corn is completely cooked. Stir bacon back in and cook for an additional 5-10 minutes, stirring often.

Spring Tube Flowers

When flattened and cut, the tubes look like flower petals as well as leaves. After a bit of painting and gluing a small bouquet is created. It'd  give a touch of Spring to any room.

Spring Tube Flowers

For one flower you will need:
1 empty paper towel roll (tube)
Ruler
Scissors
2 yellow buttons
Hot glue gun
1 wooden skewer
Paint brush
Paint in the colors of green and white

Instructions:
Press the paper roll flat and cut 1.5 centimeter segments out of it. You will need 7 segments for one flower.
Paint five of the segments completely with white paint and the other two completely with green paint.
Paint the wooden skewer also green.
When all of the pieces are dry, first glue two of the white segments together and at the same time, sandwich the green wooden skewer between the “petals”. Now glue the remaining 3 white segments onto the first two and create a flower shape in the process.
Glue the two green segments onto the skewer as if they were leaves.
Glue a button onto each side of the center of the flower.

No Bake Praline Cookies

These delicious and addictive cookies are an instant delight to anyone who taste them.

No Bake Praline Cookies 

Ingredients:
2 1/2 Cups of Sugar
1/2 Cup of Evaporated Milk  
1/2 Cup Corn Syrup  
1/2 Cup of Butter
1 Tsp Vanilla  
2 1/2 Cups Coconut  
2 1/2 Cups Chopped Pecans

Directions:
Mix sugar, corn syrup, evaporated milk and butter in a large saucepan. Bring to a rolling boil and boil for 3 minutes. Remove from heat and add the vanilla, coconut and pecans. Stir for about 4 minutes. Place by spoonful on wax paper. Let sit until hardened. Remove and enjoy.

Sweet "Potatoes" Candy

Looks can be deciciving, as is this case here. You are expecting to a potato but alas its a delicious sweet treat. Great idea for April Fools.

Sweet "Potatoes" Candy 

Ingredients:
4 tbsp unsalted butter  
4 tbsp cream cheese 
1 tsp pure vanilla extract 
1/4 teaspoon salt   
1 lb powdered sugar 
2 c walnuts (toasted, cooled and finely chopped)   
Ground cinnamon

Directions:
Beat butter, cream cheese, 
vanilla and salt until pale 
and fluffy. Mix in powdered 
sugar and walnuts until smooth. Refrigerate until firm, about 
1 hour. Roll dough (1 tablespoon each)
with hands and shape into "potatoes." Roll in ground cinnamon, brush off excess with a pastry brush. To create "eyes," stick in walnut pieces. Refrigerate for 30 minutes.
