Apple Pie Sangria

The perfect sangria for fall and winter. Absolutely delicious!

Apple Pie Sangria

Ingredients:
2 bottles White Wine
5 cups Apple Cider
2 cup Club Soda
1 cup Caramel Vodka
4 Apples, chopped
2 cinnamon sticks

Instructions:
Cut the fruit and place it in the bottom of your pitcher.
Combine all of the ingredients except the cinnamon sticks and
stir, stir, stir.
Let sit overnight (or at least a couple hours) about 4 hours before serving, throw in the cinnamon sticks and stir, stir, stir.
Serve over ice.

*Note: If yoy save the Club Soda until right before serving. It will make the drink a bit crisper.

3-2-1 Banana Bread

In a hurry but want the comfort and warmth of some home baked goodness. This recipe with make you happy you tried it.

3-2-1 Banana Bread

Ingredients:
3 Ripe Bananas
2 Eggs
1 Box Yellow Cake Mix (Dry)

Directions:
Mash the bananas, crack in the eggs and then stir in the dry cake mix. Mix well. Grease and flour twp small loaf pans. Split batter between both pans. Bake for 45 minutes at 450°.

*You can add fruit, nuts or chocolate chips to batter before baking, if desired.

Cauliflower Tots

Cauliflower is a delicious low carb alternative, the fact that is so versatile is just a bonus.  These tots are easy to make and pack a flavorful punch.

Cauliflower Tots

Ingredients:
2 cups cooked cauliflower florets, finely chopped
1 large egg
1 large egg white
1/2 cup onion, minced
3 tbsp minced fresh parsley
1/2 cheddar cheese, grated
1/2 cup seasoned breadcrumbs
salt and pepper to taste
cooking spray

Directions:
To cook the cauliflower florets, steam a little over 2 cups raw cauliflower florets in a little water covered for for 4 to 5 minutes or until tender but not mushy, then drain well and dry on paper towel, then using a knife finely chop and set 2 cups aside.

Preheat oven to 400°F.  Spray a nonstick cookie sheet with cooking spray.

In a medium bowl, combine all of the ingredients and season with salt and pepper to taste.

Spoon 1 tablespoon of mixture in your hands and roll into small ovals. Place on the cookie sheet and bake for 16-18 minutes, turning halfway through cooking until golden.

Stuffed Buffalo Chicken Roll

This is an amazingly simple recipe that makes my mouth water every time I think about it.

It's like buffalo wings in a lip smacking package.

Stuffed Buffalo Chicken Roll

Ingredients:
2 Boneless Chicken Breast  
1 Tbs Olive Oil
2 Rolls Pizza Dough
8 oz Shredded Mozzarella  
8 oz Shredded Cheddar  
1/2 Wing Sauce
1/3 Cup Ranch or Blue Cheese

Directions:
Preheat oven to 400°. Heat olive oil in a skillet, add chicken and season to taste. Cook chicken completely and then shred with two forks. Then add 1/4 cup of wing sauce, stir to coat chicken and let simmer about 5 minutes. Remove chicken from heat and let cool.

On a flat, floured surface spread out pizza dough in a long rectangular shape.

Spread dressing and remaining wing evenly over dough. Add shredded chicken and sprinkle with cheese.

Gently roll up until the ends meet. Pinch them tightly closed. Place on coated baking sheet. Bake for 25 to 30 minutes, until golden brown.

*For added flavor brush the sealed rolls with melted butter and dust with garlic powder and a sprinkle of cheese.

Boozy Chocolate Mousse

This is a super simple chocolate mouse that’s just instant chocolate pudding mixed with whipped topping. For this recipe, I made it a boozy version that uses Coffee and Irish liqueur. It’s the perfect little treat after a romantic dinner.

Boozy Chocolate Mousse

Ingredients:
Box Instant chocolate  pudding 
1 1/2 Cups cold milk
1/4  Cup Coffee liqueur
1/4 Cup Irish cream liqueur
8oz container Whipped Topping
Chocolate for curls

Instructions:
Combine pudding mix and milk in a large bowl. Beat with an electric mixer on low until combined. Beat again for another 2 minutes until pudding starts to thicken. Add liqueurs and beat again until well-incorporated.

Add whipped topping and beat again until creamy and smooth. Spoon into serving glasses or bowls and refrigerate until ready to serve. Garnish with a dollop of whip cream and chocolate curls.*

*To make chocolate curls. Using a vegetable peeler, scrape the blade lengthwise across the softened chocolate to create pretty, delicate curls. Refrigerate the curls until ready to use.

Microwaveable Caramel

Craving something rich and delicious. This easy microwaveable caramel is winner every single
time.

Microwaveable Caramel

Ingredients:
1 Cup Margarine  
1 Cup White Sugar 
1 Cup Brown Sugar
1 Cup Light Karo Syrup 
1 Can Sweet Condensed Milk

Directions:
In a large microwave bowl, melt the butter for 1 minute. Remove bowl from the microwave and add the rest of the ingredients. Mix well.
Place back in the microwave and cook on high for 9 minutes, removing every 3 minutes to stir well. After the 9 minutes stir well and pour into a lightly buttered rectangle pan. Once caramel has set, cut into squares and place in an airtight container.

*Note: If you'd like a caramel sauce, just adjust the cooking time till you've reached the desired consistency.

7 Up Biscuits

They can be whipped up in no time and come out light and fluffy with a decadent flavor.

7 Up Biscuits

Ingredients:
4 cups Bisquick
1 cup sour cream
1 cup 7-up
1/2 cup melted butter

Directions:
Melt butter and place it in a baking pan . In a seperate bowl mix sour cream into the Bisquick then add 7-UP. Mix well and dump on a well floured surface. Then pat out using your hand.

Finally flour your cutter each time before cutting your biscuits. Cut out each biscuit and add to your pan with the butter.

Bake at 425 degrees F till golden brown.

Serve and enjoy!

No Bake Avalanche Cookies

With only four ingredients and minimal work required these will become a family favorite in no time.

No Bake Avalanche Cookies

Ingredients:
2 cups Crispy Rice cereal
1 cup mini marshmallows
½ cup creamy peanut butter
1 lb white chocolate

Directions:
Line 2 baking sheets with parchment paper, set aside.
Mix cereal and marshmallows in a large bowl. Set aside.
Melt white chocolate and peanut butter together in a double boiler. I prefer using a double boiler for melting white chocolate so it will melt slow and smooth, but if you prefer the microwave, you can do it that way too.
Once the white chocolate is melted pour it over the cereal mixture and stir until completely coated.
Drop using a tablespoon onto the lined pans.
Place in refrigerators until chocolate is set.

Sausage, Potato and Onion Bake

Awesome comfort food for a nice cold fall or winter night.

Sausage, Potato and Onion Bake

Ingredients:
1 pk sausage, sliced into rounds*
1 lg onion, peeled and chopped
5 lg potatoes, peeled and chopped into 1/2 inch cubes
Oil
Salt and Pepper
Paprika
Thyme
Grated cheddar cheese

Instructions:
Preheat the oven to 400°. Line a large baking tray (with sides) with several sheets of foil, and drizzle with a bit of oil. Spread the oil out over the pan. Set aside.

Put the sausage rounds, onions and potatoes into a large 0 as much as you can.

Place into the heated oven and roast for 45 minutes to an hour, stirring every 15 minutes or so, until the potatoes are golden brown and tender. Turn off the oven.

Scatter the cheese over top of the cooked meat and potatoes, Pop back into the oven a few minutes to melt the cheese.

Serve immediately.

Too make a lighter version you can use Turkey or Chicken Sausage.

Baked Crab Ragoons

Crab Ragoons are one of my favorite things when going out for Chinese.

And, recently I found an amazingly easy and delicious to makes them at home.

Baked Crab Ragoons

Ingredients:
1/8 Tsp Garlic Powder  
1/8 Tsp Worcestershire Sauce
1 Small Green Onion, chopped  
4 oz Imitation Crab Meat
3 oz Cream Cheese, softened  
14 Wonton Wrappers

Directions:
Cut up the crab meat and mix it with the remaining filling ingredients. Spoon filling into wonton wrappers. Pinch seams together to seal. Place on baking sheet. Bake @ 425° for 8 to 10 minutes or until golden brown.

2 Ingredient Peanut Butter Cookies

Delicious cookies that are low in carbs and high in protein, what could be easier and more delicious.

2 Ingredient Peanut Butter Cookies

Ingredients:
2 Eggs
2 Cups of Peanut Butter 

Directions:
Mix eggs and two cups of peanut butter. Use an electric mixer to make a smooth batter. Using your hands roll the batter into small ping pong sized balls. Place on a pre-sprayed baking sheet. Use fork to flatten the cookies.

Preheat oven for 5-6 minutes on 200° degrees. Bake cookies for 10-20 minutes, checking often. Remove while they are still slightly soft as the will harden a bit as they cool.

Crescent Cheese Sticks

Craving some delicious, warm and ooey gooey Mozzarella Sticks? Here's a simple recipes that'll make your tummy happy in no time.

Crescent Cheese Sticks 

Ingredients:
1 Container Crescent Rolls
8 Mozzarella Sticks
Oil for frying
Marinara for dipping (optional)

Directions:
Unroll each crescent and place one cheese stick into it. Roll up the dough so that it completely covers the cheese stick. Fry them up a couple at a time until they are golden brown.

Serve warm with optional 
dipping sauce.

*I've also added chopped up jalapeños before which added a great kick.

Cranberry Cherry Ice Cream

I love everything Cranberry. This refreshing and easy take on ice cream is a favorite. 

Cranberry Cherry Ice Cream

Ingredients:  
1/2 cup sweetened condensed milk
1 1/2 cups frozen cranberries
1 1/2 cups frozen sweet cherries

Directions:In blender, puree all ingredients, stopping to press down fruit as needed, until mixture is smooth but still very thick, about 1 minute. Serve immediately.

Homemade Freezer Biscuits

Biscuits go great with all sorts of meals but who has the time to make the from scratch every time you crave them? With these prepared ahead frozen biscuits you'll have homemade biscuits on hand for every occasion.

Homemade Freezer Biscuits

Ingredients:
4 cups flour
2 Tablespoons baking powder
1 teaspoon salt
1 cup shortening or margarine  
(I use 1/2 cup each)
1 3/4 cup milk

Directions:
Mix dry ingredients together. Add in the shortening and mix until crumbly. (If you have one, you can use a KitchenAid or food processor to save time and effort). Add in the milk and mix until a ball forms.

Roll out onto a floured surface and cut into biscuits.

To Freeze: Freeze on a cookie sheet for 1-2 hours. Then remove and place in a airtight freezer bag.

To Bake: Pull the desired number of biscuits out and let thaw for 30 minutes to an hour. Bake at 450 degrees for 8-12 minutes. You can bake them straight from the freezer but they won’t rise much.

Makes 24 biscuits.

Honey Garlic Meatballs

Anything with garlic is good (the real stuff not the powdery kind). And this recipe uses frozen meatballs so it doesn’t have any prep time so to speak of. You can always make your own meatballs but in the case of this recipe we love it just the way it is.

Honey Garlic Meatballs

Ingredients:
1/4 cup brown sugar
1/3 cup honey
1/2 cup ketchup
2 tablespoons soy sauce
3 cloves garlic, minced
28 ounces fully cooked, frozen meatballs (pork,beef or turkey)

Directions:
In a medium bowl, mix together the brown sugar, honey, ketchup, soy sauce, and garlic.
Place frozen meatballs in a 4-quart slow cooker and pour the sauce over them. Stir to coat. Cook on low for 4 hours, stirring occasionally.
Serve as an appetizer, or over rice or noodles as a meal.
